Gluten Free Protein Pancakes

Gluten Free Protein Pancakes – Serves 1

These pancakes are delicious, quick and easy to make. Great addition to your gluten free and low glycemic lifestyle. You can switch out the Peanut Butter with other nut butters such as almond, cashew or hazelnut. Keep an eye on the sugar in the butters to keep the sugar levels as low as possible.

Cooking spray
1 banana, smashed
1 TBSP peanut butter
1 TBSP cinnamon
1 tsp nutmeg
½ tsp ground clove
1 TBSP vanilla extract
3 eggs

Heat pan on medium heat. Spray with cooking spray. Combine all ingredients in a blender for 30 seconds. Pour batter into pan. Cover pan and cook 2-3 minutes until the tops bubble; flip and cook until done. Spread peanut butter over the pancakes.
