Egg and Turkey Bacon Breakfast Muffin Recipe

This is such an easy and quick recipe for breakfast for a couple of days.

1 pack turkey bacon – pieces cut in half
egg beaters
1/2 cup shredded mozzarella cheese
1/2 cup diced tomatoes
1/2 cup any vegetable you like (spinach, broccoli, asparagus)

Spray a muffin tin with cooking spray
Preheat oven at 350.
Line the tins with the turkey bacon. I lay them across each other and one around the rim.
Mix the eggs, tomatoes, cheese and vegetable.
Optional: You can add spices, salt, onion powder, garlic powder to your taste.)
Fill each tin with 1/3 cup of mixture.
Bake on 350 for 20-25 minutes or until knife comes out clean.
