Looking for a delicious Gluten Free side dish for holiday meals or everyday? This cheesy zucchini noodle dish will hit the spot! My daughter LOVES to make zucchini noodles as a healthier version to replace pasta in most dishes. She has taught me how to create these noodles with a vegetable spiralizer. There are many to choose from and you can find a list HERE to see more. The ones we used on our Periscope TV Show are the Veggetti and the World Cuisine Slicer.

I have adapted the following recipe with Ground Turkey, you can use any ground meat of your choice.

Baked Zucchini Noodle Casserole

8 – 10 cups zucchini noodles with salt
3 TBSP salt (Kosher)
1 TBSP olive oil
1/2 lb (8 oz) Ground Turkey
1 TBSP sage
1/2 cups onion diced
1 TBSP minced garlic
1 – 15 oz can crushed tomatoes
1 1/2 tsp salt (kosher)
1/2 cup basil leaves sliced
3/4 cup ricotta cheese
2 cups grated mozzarella cheese
1/2 cup grated Parmesan Cheese

First, spiralize the zucchini following manufacturer’s instructions. Drain in a colander and place over a bowl. You can cut the noodles to keep them at a nice length. Add the 3 tsp kosher salt. Start the sauce as the noodles continue to drain.

Add olive oil to skillet and heat, add the ground turkey, sage, salt and pepper. (The sage will help make the turkey taste more like sausage). On medium heat continue until lightly browned. Place cooked turkey in a dish on the side.

Using the same pan, add onion and cook until softened, may 4-5 minutes. Add in the minced garlic and cook for about another minute. Pour in the crushed tomatoes and ground turkey. Bring to a boil, reduce heat and simmer for 4 -5 minutes. Add in the basil leaves and 1 1/2 tsps of salt.

While this is all simmering, go ahead and squeeze the moisture out of the noodles with a clean dish towel.
Once drained, add the noodles to the sauce. Now transfer the noodles and sauce to your oiled casserole dish (8 x 12 will work best).

Top the casserole with ricotta cheese, you may need to push it down into the noodles. Mix the Parmesan cheese and Mozzarella together to sprinkle over the top.

Bake at 350 degrees for 35 minutes. Cool for 10 minutes and ENJOY!!
