Turn Sweet Potatoes into Brownies!! What!! Low Glycemic, Delicious!
Not sure if this can be true or real, I mean seriously, sweet potatoes, mocha, brownies, something just doesn’t match up!
For the past few years I have been gluten free because of my fibromyalgia and since diabetes runs in my family, I decided to watch my sugar intake and found this delicious recipe that is low glycemic, chocolaty and it has sweet potatoes! You may not believe this either, but they are teenage boy approved!
This recipe is one from the TLS Shaking and Baking Recipe booklet from my TLS Weight loss program.
Mocha Brownies – Sweet Potato Brownies Recipe:
2 cups Sweet potatoes (peeled)
3 1/2 oz dark chocolate chips
2 TBSP oats
3 egg whites
1 tsp Agave nectar
1 tsp instant coffee
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp coconut oil (I used butter)
1 serving TLS Whey Protein Chocolate Shake
(1/2 cup almonds, chopped, optional)
Preheat oven to 350 degrees. Microwave potatoes until soft (5-6 minutes) and combine with protein powder, oats, coffee, cinnamon and baking powder using blender or food processor. Microwave chocolate and coconut oil until melted (1-2 minutes) and add to other ingredients along with agave and egg whites, mixing thoroughly. Coat 8 x 8 baking pan with cooking spray. Pour batter and bake for 30 minutes.

I love helping others find different ways to make snacks that are healthy and delicious and good for you. This brownie is packed with protein, fiber and healthy carbs. Let me know how you like it when you make it. I’m not a big fan of cooking, but this was easier than I thought to prepare.
My 14 year old and 18 year old boys ate the entire batch of my first try. I had to hide the second batch for my nutrition event last week~!
