What’s Cooking With Coach Mo Episode 1 Deviled Chicken Recipe

For my first episode I was asked by a few fabulous #PeriGirls to share the ingredients for my recipe so they could be prepared and cook along! This should be interesting! I will be sharing the replay here and will be available on Periscope @PeriGirlsTV if you miss the live episode.

I will share a bit on what low glycemic means and then start cooking my husband’s favorite dish – Deviled Chicken.

Deviled Chicken  Serves 2

¼ TBSP yellow mustard
1 garlic clove
¼ red bell pepper
¼ tsp red pepper flakes
¼ medium onion
1/2 can tomato paste
¼ TBSP black pepper
1 TBSP parsley
¼ cup chicken stock
½ TBSP paprika

2 lbs boneless chicken breast

Mix the paprika and mustard with salt and pepper and season chicken breasts on both sides.

In a skillet over medium-high heat, add the seasoned chicken to the skillet and brown on the first side for 3 minutes; flip and then sear the second side for 2 minutes.

Remove the chicken and reserve on a plate under a foil tent. Then add the onion, garlic, bell pepper, tomato paste and red pepper flakes to the pan. Cook the vegetables for 5 minutes. Add 1 cup of broth to the vegetables and bring to a simmer. Add the reserved chicken back into the pan and cook for 10 minutes more, turning the chicken a few times. Remove the chicken to a platter. To finish the sauce, turn the heat off and add the parsley. Pour the sauce over the chicken and serve immediately.

You can serve with rice or cauliflower rice and your favorite veggies.
