Glutenfree Peanut Butter Blossom Cookies Recipe

HI! I am glutenfree and have been for years. I feel so much better, but I have very much missed Christmas Cookies! I have not made them for a few years. This morning my husband said he missed the Christmas Cookies each year. Sooooo I decided to make this Glutenfree Peanut Butter Blossom Cookie. I am loving Periscope, so I decided to scope it as well! Here is the recipe I used, I went off the back of the Chocolate Kisses bag and revised a couple of things.

Peanut Butter Blossoms

48 Hershey’s Kisses – remove wrappers (buy 2 bags because you will eat some lol)
1/2 cup butter
3/4 cup peanut butter
1/3 cup granulated sugar
1/3 cup brown sugar packed (I used dark, recipe called for light)
1 egg
2 TBSP milk (I used unsweetened Vanilla Almond Milk)
1 tsp vanilla
1 1/2 cups all purpose flour ( I used King Arthur Gluten free all purpose flour)
1 tsp baking soda
1/2 tsp salt
Granulated Sugar

Heat oven to 375
Beat Butter and peanut butter until creamy
Add granulated and brown sugars and beat again until creamy
Add milk, egg and vanilla, beat well.
In a separate bowl, mix the gf flour, baking soda and salt. Slowly beat into the peanut butter mixture.
Shape dough into 1 inch balls, roll in sugar, place on ungreased cookie sheet (I use parchment paper instead).
Bake 8 to 10 min (10 seemed to work better in my over, could have done 11 if needed)
Immediately press chocolate into center after removing from oven.
Cool on wire rack. Makes approx 4 dozen cookies, mine only made 2 dozen bigger cookies.
